I’ve been away from the shop for over a week now because of a family wedding. Today, I came back to find everything was not as I remembered. First off, I was supposed to arrive at 10am, but since I wasn’t aware of this, I arrived 45 minutes later, leaving another coworker waiting outside! As soon as the doors were unlocked, customers came flocking in. We were slammed at 11am, and I needed to get reoriented quickly! It threw me off to see that we were out of cheese wrapping paper, bags, and butcher tape–key tools of the job. The cheese counter was busy the entire day, which was great, but also a little tiring. I got to construct quite a few Christmas gift cheese baskets, which I love to do, but with so many customers there, I did feel a bit of pressure to move faster.
I noticed we got some new cheeses in for the holidays, including a holiday version of my beloved chabichou covered with pink peppercorns (I was so disoriented at the beginning, all I could think of was the French term, “baie.”), Langres, a new round of brie, and a truffle-infused grès des Vosges. I am excited to send them all off to happy homes.
The day was so busy that I didn’t have time to even look at the cheese plate condiments, much less make any new ones. We are sadly out of apricot chutney, and the onions in port wine look a bit too clumpy for my taste. I’ll need to make both of those, but seeing as these are the holidays, and things are EXTREMELY busy, I don’t know how much time I am going to have to do it!
Christmas cheese, here I come!
