Another full day–honestly, every day here presents new challenges and new situations. It all started off when I realized I’d left my shop key at home. Carlos had to come out to open up for us. :( As if he has nothing else to do all day!
One of my tasks for the day was reworking one of the apricot chutneys that had been made. It was not bad as is, but it was missing some of the savory elements that the chutney usually has. After tasting it, I realized it needed the garlic, ginger, and mustard seeds in the house recipe. So, I broke out the burner, and sauteed about 8 cloves of garlic (about half of the usual amount because it was a small batch), a good amount of ginger, and a heaping tablespoon of mustard seeds before adding the chutney. Then, I added more water and vinegar, and let everything reduce again so the flavors could all meld. This was my first time reworking a condiment, so I wasn’t entirely sure I was going to be successful, but it worked. Carlos approved when he tasted it later that evening. Success!
Just in passing, because I noticed a round of Langres had been cut open, the evening cheesemonger and I decided to have a taste. It’s been a long time since I’ve had Langres, and I remembered why I loved it so much. So buttery, with hints of wildflower….I’ll write a review of it soon enough.
