When in Mainz, my friend and I went out to a flammekuche dinner. Mr. Cheesemonger had introduced me to this delectable, pizza-like dish when we lived near Paris years ago, but I hadn’t had it in so long! Our chosen restaurant, Kamin, is a local favorite. Luckily we arrived early or we wouldn’t have been able to get a seat. I ordered the “Speziale,” which is topped with crème fraîche, onions, ham, cheese, and mushrooms. My friend ordered one topped with crème fraîche, pear, speck, gorgonzola, and honey.
The crust of flammekuche feels ultra thin, probably even thinner than the pizzas I devoured in Firenze. The crème fraîche just softens and harmonizes all flavors, so it’s an easy, comforting dish to eat. My friend and I turned out to be perfect flammekuche partners, since she prefers the gooey centers and I like nibbling on the crispy crust around the edges. Given the cold weather, we were happy to have such a tasty, filling dinner!
